30 Minute Taco Salad


You’ll need:

  • 1 large nonstick pan (to cook the meat)
  • 1-2 spatulas or wooden spoons
  • 2 tbsp of canola oil
  • 1 tsp of black pepper
  • 2 packets of reduced or low-sodium taco seasoning mix
  • 2 lbs of ground turkey
  • 1 chopped onion
  • 2 cans of whole kernel corn
  • 2 cans of petite diced tomatoes
  • 2 cans of black beans


Heat saute pan on medium heat. Add 2 tbsp of canola oil to pan. Add ground turkey to the pan and season well with black pepper. Crumble the meat with the spatula as it cooks.

Next, add the chopped onion. Mix the onion into the meat. Replace the lid and let the meat and onion cook together for 5 minutes.

Now add 1 pack of taco seasoning and stir until the meat and seasoning mix appears “wet”.


Then add 2 cans of whole kernel corn (drain first). Stir until the the meat, seasoning, onion and corn appear well mixed.

Add 2 cans of diced tomatoes and stir it in. (This will keep meat from becoming too dry as you’re cooking, and it’s also delicious.)

Add 2 cans of black beans, and stir it in.

Add last packet of taco seasoning, mix together and let sit on medium heat for 5 to 10 minutes while periodically stirring.


Once it looks like this, you know you’re done!


Add freshly chopped lettuce and tomato, shredded cheese, salsa, sour cream, and your choice of tortilla chips to finish. 🙂
